Meat Department Supervisor

Position is based out of Onekama, Michigan

JOB PURPOSE:  

 Oversees the meat department operations, including managing staff, ordering inventory, and ensuring superior customer service.  The Meat Department Supervisor will be responsible for ensuring all safety and sanitation guidelines and regulations are adhered to.

 

PRIMARY RESPONSIBILITIES:

  • Supervision and management. Assists in the hiring, training, scheduling, and evaluation of performance of staff for the department.
  • Maintains inventory working with manager to select inventory, including types and quantities appropriate for changes in retail activity.
  • Develops and maintains good working relationships with purveyors.
  • Cuts and trims meat to size for display or as ordered by a customer using hand tools and power equipment, such as a grinder, cubing machine, and power saw.
  • Ensure meats are displayed and packaged appropriately for sale.
  • Product development and management. Develops and updates menus for catering, meals, and carry-out specials, ensuring pricing is competitive and the quality meets the company standards.
  • Develops new products, documents recipes to ensure standardization and works with the SM to promote.
  • Develops and manages budget for department, monitors expense and investigates and resolves variances in inventory or costs.
  • Provides customer service by processing requests for specific cuts of meat, providing information to customers on availability of specific cuts of meat, and how to prepare or cook the meat.
  • Provides advice on special orders such as deli trays or catering.
  • Ensure equipment, work surfaces, display cases, refrigerators, and freezers are cleaned properly with safe temperatures always maintained.
  • Ensure the meat area is prepared for inspections, whether planned or unplanned.
  • Assists as needed in the retail deli area preparing customer orders, stocking meats and cheeses.
  • Follows all safety standards and regulations.
  • Monitors staff training for compliance and necessary re-certifications.
  • May assist in other areas in the store manager's absence.

QUALIFICATIONS

  • Must be 18 years of age or older.
  • High school degree or GED combined with two to three years of relevant experience is required.
  • Knowledge of food retail marketing practices.
  • Strong analytical skills.
  • Previous supervisory experience.
  • Budget management experience.
  • Inventory management experience.
  • Knowledge of the preparation of all meats and fish for the retail market, including, but not limited to, selection, types of cuts, trimming, grinding, storage, and preparation.
  • Knowledge of curing or smoking meats and preparing sausage.
  • Experience working with purveyors and inspecting new meat purchases.
  • ServSafe certification.
  • Basic math skills are necessary.
  • Must be able to read and apply company procedure documents.
  • Excellent interpersonal skills are necessary to greet customers and provide information in an accurate and courteous manner.
  • Must be able to work in a team environment.
  • Must be able to handle multiple tasks accurately and courteously.
  • Must be able to complete company-sponsored training and required updates within specified training periods.

PHYSICAL REQUIREMENTS:

  • Ability to lift fifty (50) pounds throughout a normal shift, moving and stacking merchandise, cleaning, sweeping, shoveling snow.
  • Ability to work in commercial refrigerators and freezers.
  • Ability to safely handle all necessary cutting tools.
  • Ability to stoop, bend, and stand for extended periods of time.
  • Ability to work inside coolers to maintain inventory.
  • Ability to ascend and descend a five-foot step ladder safely.
